Traditional unfiltered vinegars, combining the sharp tang of vinegar with the sweet pulp of fruit. Adds flavour to all kinds of game dishes, and makes a great rustic mushroom paté.
Add to crisp raw vegetables such as cabbage, fennel or endive, or lightly cook them and add a dash of rapeseed oil, pine nuts and hazelnuts. Serve warm.
